UPDATimes - Crispy chicken made by KFC fast food restaurants is indeed popular with many people. It is said that the chicken was made with 11 secret ingredients so it tasted so delicious.

Material A :
  • 800-1000 gr thigh or breast chicken, cut according to taste
  • 1 egg, add a pinch of salt and kock
  • 250 ml of ice water
  • 1 tsp Baking soda
 
Material B (Fine seasoning):
  • 10 cloves of garlic
  • 1 teaspoon Pepper or granules
  • 1 segment of ginger
  • 2 Blocks of chicken stock
  • 1 teaspoon salt
  • 1/2 teaspoon coriander (optional)
  • 3 red chillies (optional)
  • 1 turmeric segment (optional)

Material C (for coatings):
  • 450 grams of Cakra flour (High Protein)
  • 150 grams of cornstarch
  • 2 teaspoons paprika powder or red chili powder for those who like spicy
  • To taste broth (block broth) to taste or salt
  • 1 teaspoon basil powder (optional)
  • 1 teaspoon oregano powder (optional)
  • 1 tsp ground pepper (optional)

Steps:
  1. To make a seasoning coating, prepare the container and mix the ingredients in (Material C). Stir until even then set aside.
  2. Wash chicken thoroughly, then mix with spices (Material B). Stir until evenly distributed and put it in the refrigerator overnight so that the seasoning absorbs. For a shorter time, you can leave it for 3-5 hours.
  3. Prepare 250 ml of ice water and mix with 5 tablespoons of prepared C ingredients. Add 1 teaspoon baking soda. Set aside or store in the refrigerator to keep it cool.
  4. Remove the chicken from the refrigerator, add the beaten eggs and add a pinch of salt. Then, process the chicken with flour coating (Material C) and then shake the chicken. Dip it in ice water for a while and add it again with flour coating while a little squeezed / pinched so that flour sticks and expands.
  5. Fried chicken in hot oil and low heat. So that the results are crispy, the process of squeezing is done just before entering the frying pan, because if it is left too long the results can be hard. Fry until browned and serve.
